The upper part of the machine consists of the cooling container where the mix is stored at a temperature of 4 degrees. The temperature is constantly checked. Liquid mix is fed into the cylinder through adjusting valves, which automatically measure the amount of air (40% overrun). The amount of air can also be regulated through a patented gear pump that forces air into the mix and causes the volume to increase (80% overrun). In the middle of the machine is the horizontal cylinder that produces ice cream. A special agitator ensures that ice cream can be dispensed and is constantly monitored by a control system.
